Dry white wine made from the native Ribolla Gialla grape variety, grown on the Eastern Friuli hills since way back in medieval times. As witnessed by numerous antique documents, this wine was once of considerable importance, and it was considered to be one of the best in the area, so much so as to be offered as a propitiatory gift to those in power as well as to the most welcome guests. It was so important that, in 1402, the Municipality of Udine decided to protect the quality with a special regulation preventing additions and mixing. In observance of tradition, the grapes are harvested by hand and selected before vinification. Fermentation takes place at a low temperature in small oak barrels. e wine then spends 10-12 months on its own fine lees. Final maturing takes place in the bottle for 6-7 months
